Conegliano Valdobbiadene:

The Land of Prosecco DOC

 

Prosecco DOC is produced some 50 kilometers (30miles) to the North of Venice (Veneto region), on the hills between the towns of Conegliano and Valdobbiadene. The unique natural environment here yields the world's favorite Italian sparkling wine. Prosecco has become one of the symbols of the Italian lifestyle in the world. The production zone extends through the band of hills of the province of Treviso, in the Northeast Italy, lying between Venice and Dolomites. The Prosecco vine has been cultivated on these hills for over two hundred years and, thanks to the balanced relationship between climate, soils and oenological tradition, Conegliano-Valdobbiadene has been renowned today as the original "Land of Prosecco DOC".

Prosecco vines are grown only on the south-facing slopes of th hills at an altitude of 165 - 1650 ft. above sea level. The steep slopes of the hills make it difficult to harvest the grapes mechanically and therefore most of the produces, who manage the vineyards are small growers.

Prosecco di Conegliano-Valdobbiadene takes name from the grape variety Prosecco. The Prosecco grape has found its ideal environment on the hills of Conegliano and Valdobbiadene and has been present in this area for at least two centuries.

The particular types of soils, the south-facing hills, the temperature between night and day, and the amount of rain are crucial conditions in producing of this elegant and refreshing wine with its amazing fruity and floral aroma. A long fermentation by the Charmat method with locally selected yeasts gives the wine a mild alcoholic content. The main rule in the wine making process is to conserve what nature has given to the grapes.

There are precise rules that guarantee the uniqueness and authenticity of Prosecco di Conegliano-Valdobbiadene. These rules enabled the wine to retain its distinct and unmistakable identity. Prosecco di Conegliano-Valdobbiadene is recognized by its pale straw-yellow color, its moderate body and exclusively fruity and floral aroma. There are three distinct types of wine produced:

 

Prosecco di Conegliano-Valdobbiadene Brut

This particular wine is characterized by richer aromas of citrus fruit and fresh vegetation with pleasant hints of bread crust, coming together on the palate with and exquisite freshness. Its fine perlage ensures a persistent taste that is clean on the palate. Residual sugar of 15 grams per litre. The wine pairs will with fish, vegetables, hors d'oevres and first seafood courses.

 

Prosecco di Conegliano-Valdobbiadene Extra Dry

This wine is considered the "classic" Prosecco. It is a combination of aromatic quality and sapidity on the palate with brilliant straw-yellow color enlivened by its perlage. Prosecco di Conegliano-Valdobbiadene Extra Dry has fresh and rich fruity aroma of apple and pear with a hint of citrus fruit that fades into the floral bouquet. The taste is soft, yet dry thanks to its great acidity. Residual sugar of 12 - 20 grams per litre. It is an excellent accompaniment to vegetable soups, pasta dishes with light meat sauce, fresh cheeses and white meats.

 

Prosecco di Conegliano-Valdobbiadene Superiore di Cartizze

This is the embodiment of a grand "Cru" Prosecco. Its intense, dark hay color signals the complexity of the ample followed by inviting aromas of apple, pear, appricot, citrus and rose with an pleasant aftertaste of glazed almonds. Cartizze is produced almost exclusively in dry version. Residual sugar of 17 - 35 grams per litre. Cartizze is excellent with all kinds of desserts: from simple pastries, for fruit tarts.
